Stuffed Dates
Stuffed dates make a simple treat for a party or a snack. The filling has a texture similar to that of whipped cream and rich flavor from the rum, although whiskey or other liqueure is also delicious. You may toast the coconut or leave it untoasted if you're pressed for time. Rooster Brand coconut milk in the tin with the gold metallic label is a thicker product that works well here.


4 oz cream cheese (small package)

1 tbls coconut cream (Rooster Brand)

2 tbls flaked coconut, toasted

1 tbls amber rum (or 1 tsp vanilla extract)

1 small container whole dates

Toast the coconut in a pan on the stove at medium-low heat, stirring frequently, until nicely browned; set aside to cool.  Beat the filling ingredients with an electric mixer until smooth. Add the coconut last.

Slice dates in half and remove pits.  Fill the dates and mound with filling.  Chill.  May be served with a toothpick inserted in each one.
