Fresh Peach Sauce

For pancakes or ice cream, this fresh peach sauce is a wonderful addition!  It’s also a great way to use up some fresh peaches while they’re in abundance, and will keep well in the refrigerator. Can be served warm on pancakes or waffles, or at room temperature for ice cream or other desserts.
Pancakes with Fresh Peach Sauce

4 small peaches or 3 medium

¼ cup granulated sugar

1 tbls cornstarch

½ lemon, juice and zest

1 tbls cinnamon

1 – 2 tbls vanilla extract or liqueur

Fresh Peach Sauce

In a medium saucepan, stir the sugar and cornstarch.  Add the lemon juice.

Place peaches in a heat-proof bowl and pour boiling water over.  After a few minutes, remove and place in cold water, then peel the peaches.  They should be soft and easy to chop, either by hand or in a food processor.

Place chopped peaches, cinnamon, and lemon zest in the saucepan with the sugar mixture and heat on medium, stirring constantly, until bubbling and thickened, about 5 minutes.  Remove from heat and stir in vanilla or liqueur, rum, or whiskey.  Mixture should be thick but pourable.  If desired, a hand blender may be used to puré the mixture, but small chunks of fruit are desirable for texture and flavor.
