Oh So Good! Cookies

These cookies are nutrient dense and intensely delicious! Toast the seeds in the oven or on a pan on the stove top for extra nutty flavor. Be sure to use rolled oats and not quick or minute oats, because the over-processed oats have been robbed of their flavor, nutrients, and texture.

cup margarine or butter

cup brown sugar, loose

1 egg

1 tsp vanilla extract

2/3 cup whole wheat flour

tsp baking soda

1 tsp baking powder (for soft cookies)

tsp salt

1 cup rolled oats

1 cup chocolate chips

cup sunflower seeds and sesame seeds, toasted

cup coconut

Cream butter, sugar, egg, and vanilla together until fluffy.

Spoon flour, soda, salt, baking powder, oats, chocolate chips, seeds, and coconut into large bowl and mix well.

Stir creamed mixture into dry ingredients with a wooden spoon, blending well.

Drop mixture with spoon and spatula onto greased baking sheets (or non-stick), allowing space for spreading.  Press and shape with floured fork.

Bake at 375° F for 8 to 10 minutes, switching pans at half-time.  Remove when cookies are lightly browned on their bottoms.

Yield:  2 dozen large cookies
