Oatmeal Squares

Oatmeal Squares with Almonds and Sesame Seeds Try this easy recipe for a nutritious snack using rolled oats and brown sugar. Kids love these wholesome treats, and can easily help to make them as well. These oatmeal squares are a lot like a Granola Bar with nutritious sesame seeds or sliced almonds--any finely chopped or sliced nuts will work. Be sure to use rolled oats, because they have more flavor and texture than minute oats.

1 cup butter or margarine

2 tsp vanilla extract

2 – 4 cups rolled oats

1 cup brown sugar (Demerara preferred)

2 tsp baking powder

1 tsp salt

½ cup sesame and/or sunflower seeds (or finely chopped/sliced nuts)

Preheat oven to 350° F. Place butter and/or margarine in an 8” square pan and heat in oven until melted. Mix dry ingredients thoroughly. Remove pan from oven and stir in extract. Pour margarine over blended dry ingredients. Mix until evenly coated.

Press mixture into the pan and bake for 30 minutes or until nicely browned.  Cut into squares while still warm.
