Chocolate Mint Patties
These delicious Peppermint Patties can be cut out with any shape of cookie cutter you wish, including hearts for Valentine's Day!  Remarkably simple to make, and yet they are sure to impress your loved ones . . .

3 2/3 cups (1 lb.) powdered sugar

¼ cup cocoa

1/3 cup butter, softened

1/3 cup light corn syrup

1 tsp peppermint extract

Sift together powdered sugar and cocoa; set aside.

In a large mixer bowl beat butter, corn syrup, and peppermint extract on medium speed of an electric mixer until well blended.

Gradually add 1 to 2 cups of the cocoa mixture, beating until well blended with a wooden spoon. Stir in remaining cocoa mixture. With hands, knead until mixture is well blended and smooth.

On wax paper, pat or roll out to ¼” thickness. With small cookie cutters, cut into hearts or other desired shapes (or, using about 1 tsp. of chocolate mixture for each, shape into balls and flatten into patties).

Garnish as desired. Store tightly covered in the refrigerator.

Makes about 7 dozen patties.
