Kedgeree

Here's a handy brunch recipe that can be put together using leftovers. If you have rice, especially brown rice, cooked and maybe some boiled eggs, you're all set!

Per serving you will need:

cup cooked brown rice

2-3 hard boiled eggs, quartered

1 tsp Chutney

tsp Salt

freshly ground pepper to taste

1 tsp curry powder

2 tbls olive oil

-heat olive oil in a non-stick pan/stir fry pan

-toss in rice, chutney, curry powder, salt, pepper

-stir until combined

-add eggs and fold in

-cook until thoroughly heated

-serve with beer
