Flavoured Olive Oil

 
 

For a unique and zesty flavour, especially if you are making salad dressing, try adding natural ingredients to your already flavourful olive oil. The technique for flavouring oil is quite simple: fill a clean mason jar with your flavouring ingredients, cover with fine quality virgin olive oil, and place in a warm, dark place. (Next to your computer modem is ideal!)

Olive oil is famous for reducing cholesterol levels, even in individuals who consume large amounts of saturated fat in their diets.

Wait for a few days, depending on the ingredients youíve used.† Some ingredients may become bitter quickly, or overpowering.† Orange peel may only take a day or two, but test the oil by placing a drop on your tongue.

When the oil is flavorful, pour it into a new container such as a cruet by straining the oil through cheesecloth.† Donít throw your flavouring ingredients away, however; these should be used in recipes and may be stored in the refrigerator for quite some time, especially if you are adding them to a recipe that will be cooked.† The oil will help to preserve the ingredients.

Suggestions for ingredients to use include lemon zest, orange zest, peppercorns, fresh rosemary, thyme, sage leaves, fresh chives, and roasted garlic cloves.

When using herbs, prefer young tender herbs to avoid bitterness.

When cooking pasta, drain and then toss noodles with your flavored oils for a delectable aroma and taste.
