Creole Chili

This appetizing recipe for Creole-style Shrimp and Beans calls for okra and navy beans or white beans. Navy beans are remarkably nutritious and although shrimp is one of the seafoods that is not low in fat, shrimp have Omega fatty acids. So, this recipe is not only delectable, but healthful!

1 cup dry navy beans

3 cups chicken broth

2 stalks celery, diced

1 onion, diced

1 clove garlic, minced

tsp salt

1/8 tsp pepper

1 bay leaf

1 tsp thyme

2-3 drops hot pepper sauce (optional)

1 tsp Worchestershire Sauce

1 19 oz can tomatoes

1-5 oz can tomato paste

1 tbls dry mustard

lb okra, chopped

1 cup partially defrosted medium shrimp

Rinse the beans and place in a large pot with ample water to cover. Heat on the stove to the boiling point, then turn off the element and allow the beans to sit for an hour. Drain and rinse the beans in a colander, then return to pot. Add the broth and bring to the boil again, then reduce heat and simmer, stirring occasionally, for an hour or until the beans are tender.

Stir in the shrimp, celery, onion, garlic, seasonings, and sauces.  In a bowl, break up tomatoes, mix with tomato paste and mustard; stir into bean mixture.  Cover and simmer for half an hour.

Stir in okra, cover, and continue simmering for 10 minutes, then add the shrimp and cook for another 10 minutes.  Remove the bay leaf.

Makes 6 servings.
