Chocolate Chunk Cookies
The ultimate chocolate chunk cookie has coconut and almonds to add to its texture. If you have white chocolate handy, you can use some in place of the dark chocolate, if you like.

1 cup shortening

1 cup lightly packed brown sugar

cup granulated sugar

2 eggs

2 tbls milk

1 tsp vanilla

2 cups flour

1 tsp baking soda

tsp salt

6 squares semi-sweet chocolate, coarsely chopped

1 cup flaked coconut

1 cup unblanched almonds, coarsely chopped

Cream shortening, sugars, eggs, milk, and vanilla together until light and fluffy.  Mix flour, baking soda, and salt in a separate bowl; combine wet and dry ingredients.  Add chopped chocolate, coconut, and almonds.

Drop by tablespoonfuls onto greased baking sheets.  Bake at 350° F for 8 – 12 minutes or until golden.

Makes 4 dozen cookies.
