Apple Cheesecake
This white cheesecake recipe has three layers, yet is simple to prepare because of the few ingredients required. In addition, it is impressive because of its flavor! Also worth noting is the fact that its less expensive to make than more elaborate recipes . . .
 

Crust

1/2 cup butter

1/3 cup sugar

1 cup all-purpose flour

Filling

8 oz cream cheese

cup sugar

1 large egg

1 tsp vanilla

Topping

1 lbs apples (3 large)

cup sugar

tsp cinnamon

cup sliced almonds

Place a pan of water on the bottom rack of oven; preheat to 450° F.

Cream butter and sugar together for crust.  Add flour and mix well.  Press into bottom and 1 ¼" up the sides of a small to medium sized springform pan.

Cream together cheese and sugar for filling.  Add egg and vanilla.  Blend until smooth and set aside.

Peel and core apples, then slice thinly.  Combine sugar and cinnamon and shake together with apple slices to coat.  Spoon filling into crust, then arrange apple slices over filling in a pinwheel pattern. Sprinkle sliced almonds evenly over top.

Bake in preheated 450° F oven for 10 minutes, then reduce heat to 400° F and bake 25 minutes more.  Cool to room temperature, then refrigerate 3-4 hours before serving.

May be served plain, with whipped cream, or with vanilla ice cream on the side.
